After the determination of the world situation, that of Turkey was determined. Production, consumption, foreign trade, stocks, prices with vegetable oil were examined. Olive oil, sunflower oil, soybean oil, cotton oil, rape oil which are economically important for Turkish agriculture were studied in detail. On the other hand, corn oil, sesame oil, poppy oil, peanut oil, safflower oil and palm oil were dealt with superficially because some of these are not produced in Turkey and some are produced only in small amounts. The years between 1987 and 1996 were taken as the research period; however, particular emphasis was given on the period since 1990. As a result, it was found out that production of the vegetable oil in Turkey is 667 000 metric tons, consumption is 1 162 000 metric tons, and oil shortage is 495 000 metric tons. It is assumed that vegetable oil shortage in Turkey has become chronic and it will grow more unless measures are taken. To meet the existing vegetable oil shortage, 850 000-900 000 metric tons of vegetable oil (including seed ) are imported whereas 150 000-200 000 metric tons of refined oil and 100 000-150 000 metric tons of margarine are exported. Approximately 250- 300 million dolars are spent annually to meet the vegetable oil shortage via importation. In short term, sunflower seed production must be increased. Besides, production of soybean seed, rape seed, safflower seed, which might be termed as alternative oil plants, must be encouraged. In importation priority must be given on oil-seed rather than raw vegetable oil. KEY WORDS : Oil seeds, vegetable oil, olive oil, sunflower oil, cotton oil, soybean oil, rape oil, corn oil.
