The research is carried out to determine the effects of storage conditions and packaging materials on postharvest quality changes of celeriac. İzmir celeriac cultivar were used in the experiments. Roots were stored in the cold stores set at 0° and 5°C at 85-90% relative humidity and in ventilated store. Roots were placed into storage areas in open trays and in 5kg sized perforated PE bags. Weight loss, color changes, skin and core thickness, rooting and sprouting ratio, hallowness, loss due to infections, respiration rate, total soluble solids and poliphenol oxidase enzyme activity were evaluated at mounthly intervals during storage period. The results showed that color change can not be used indicator of postharvest storage duration. However, weight loss is a useful index for the determination of storage period since 8% weight loss causes shrevelling in the roots. Microorganism caused losses were found to be dependent upon to the packaging application and storage temperature. When the all data and observations taken together, the best conditions for storing celeriac was determined as 7 mounths within perforated PE bags under 0°C temperature and 85-90% relative humidity.
