Özet
In this research Rhyzopertha dominica (F.) and Tribolium confusum (Duv.) contaminated two different wheat varieties and were stored during 5 months. After this period searches were done about the effects of insect reproducing to physical, chemical, Theological and baking properties of these wheat varieties. Rhyzopertha dominica growth was more quickly than Tribolium confusum on the both of wheat varieties. For this reason the effect of Tribolium confusum growth was not shown so much different on wheat varieties. On the other hand Rhyzopertha dominica decreased thousand kernel weight, hectoliter weight, flour yield and increased moisture and ash content. After milling of these samples, flour ash content was increased and gluten quality was damaged. Flours' farinogram and extensogram values were effected negatively. Insect reproduction was also effected baking qualities. Especially crumb properties were effected adversely, taste and odour were spoilt. Wheat variety was important on insect reproducing. The demage depending on reproduction was greater on Gerek wheat. KEY WORDS: Storage insect, insect damaged, physical quality criteria, farinogram value, extensogram value, baking quality.
