Prof. Dr, Nilgün HALLORAN This research was carried out to determine the effects of different substrates on the yield and quality of oyster mushrooms (Pleurotus ostreatus (Jacq. ex. Fr.) Kummer). Experiments were conducted at the Mushroom Production Facility of Ankara University Department of Horticul ture during the period of 1993-1994.-IV- This experiment describes the changes in the yield (pilues and stipe), dry matter percen tage, arude protein percentage, pileus diameter, pileus weight, stipe diameter and stipe length of oyster mushrooms (Pleurotus ostreatus) inoculated and grown in different substrates composed of the mixtures of rice waste materials (PK), paddy straw (ÇS), corn straw (MS), wheat straw (BS), rice waste materials + wheat straw (PK + BS), paddy straw + wheat straw (ÇS + BS), corn straw + wheat straw (MS + BS). The highest yield as 414.92 g was obtained in PK + BS (1:1) media. The yield of BS media which is considered as control gave the second highest result with 376.48 g. The yield obtained from ÇS + BS, ÇS, MS + BS, MS and PK was 365.45 g, 203.17 g, 97.91 g, 64.35 g and 43.02 g res pectively. The highest values as pileus yield, stipe yield, pileus diameter, dry matter and crude proti- en were obtained in the PK + BS media as 396.03 g, 1 8.89 g, 1 51.39 mm, % 9.07 and % 32.72 res pectively. Stipe lenght and stipe diameter values were the highest in ÇS media as 35.41 mm and 3058 mm respectively. KEY WORDS : Pleurotus ostreatus, substrates, waste matters, yield and quality factors.
