Isıl işlem uygulanarak üretilen sucukların bazı kalite özelliklerine fermentasyon süresinin etkileri

Bu çalışmada 0, 1, 2, 3, 4, 5 ve 6 gün fermente edilerek üretilen sucuklara 60oC'de 10 dakika süreyle ısıl işlem uygulanmış ve fermentasyon süresinin ve ısıl işlemin sucuğun rutubet, protein, yağ, kül, tuz, pH, titrasyon asitliği, serbest yağ asitliği (SYA), tiyobarbiturik asit (TBA), yağ asitleri dağılımı, renk, kalıntı nitrit, nitrozomyoglobin, toplam pigment, nitrozopigmente dönüşüm oranına, aroma bileşenleri miktarlarına; toplam mezofil aerobik bakteri (TMAB), laktik asit bakteri (LAB), stafilokok-mikrokok ve koliform bakteri sayılarına ve duyusal değerlerine etkisi araştırılmıştır. Fermentasyon süresine bağlı olarak ısıl işlem uygulanmayan sucuklarda rutubet miktarı %57,97-43,62, protein miktarı %12,66-15,75, yağ miktarı %25,54-31,65, kül miktarı %3,34- 4,15, tuz miktarı %2,41-2,99, pH değeri 5,88-4,85, SYA miktarı 3,44-5,49 mg KOH/g yağ, TBA miktarı 0,264-0,379 mg ma/kg, L* değeri 48,45-43,66, a* değeri 16,81-18,35, b* değeri 18,33-17,23, kalıntı nitrit miktarı 27,83-7,69 ppm, nitrozomyoglobin miktarı 75,49-177,33 ppm, toplam pigment miktarı 208,64-214,42 ppm, nitrozopigmente dönüşüm oranı %36,17-82,72, TMAB sayısı 7,52-8,90 log kob/g, LAB sayısı 6,89-8,90 log kob/g, stafilokok-mikrokok sayısı 6,82-4,37 log kob/g ve koliform bakteri sayısı 4,53-1 log kob/g olarak saptanırken ısıl işlem sonrası bu kriterler sırasıyla %55,36-43,09, %13,36-15,89, %26,58-31,89, %3,48-4,19, %2,53- 3,05, 5,96-5,05, 2,92-5,07 mg KOH/g yağ, 0,575-0,662 mg ma/kg, 50,23-47,01, 15,88-17,88, 20,06-18,32, 9,85-1,84 ppm, 136,36-152,50 ppm, 188,97-185,58 ppm, %72.88-81,95, 4,52-3,60 log kob/g, 2,86-2,00 log kob/g, 5,51-<1 log kob/g ve <1 log kob/g olarak saptanmıştır. Geleneksel Türk sucuğunda aynı kriterler sırasıyla %35,29, %17,38, %35,21, %4,57, %3,33, 5,05, 6,74 mg KOH/g yağ, 0,427 mg ma/kg, 45,97, 15,44, 12,10, 6,04 ppm, 183,32ppm, 215,33 ppm, %85,16, 7,36 log kob/g, 8,63 log kob/g, 4,53 log kob/g, <1 log kob/g olarak saptanmıştır. Bu kriterlerin hepsine fermentasyon süresinin ve ısıl işlem uygulamasının etkisinin (P<0,01) önemli olduğu görülmüştür. Sucukların uçucu aroma bileşenleri fermentasyon süresince ve ısıl işlem uygulamasıyla değişmekte, bazı bileşiklerin miktarı azalmakta, bazı bileşiklerin miktarı artmakta ve bazı yeni bileşikler oluşmaktadır. Baharattan kaynaklanan bazı uçucu aroma bileşikleri ısıl işlem uygulamasıyla birlikte kaybolmaktadır. Isıl işlem uygulamasıyla sucuğun aroma bileşenleri değişmekte ve geleneksel sucuğun tat, koku ve lezzeti ısıl işlem uygulanmış sucukta oluşmamaktadır. Isıl işlem uygulanmış sucuklarda fermentasyon süresinin uzaması sucuğun duyusal özelliklerini artırmaktadır (P<0,01). Abstract In this research sucuks fermented for 0, 1, 2, 3, 4, 5 and 6 days were heat processed at 60oC for 10 minutes. The effects of fermentation intervals and heat processing on moisture, protein, fat, ash, salt contents, pH, titration acidity, free fatty acidity (FFA), thiobarbituric acid (TBA) values, fatty acids distribution, color, residual nitrite, nitrosomyoglobin, total pigment, nitrosopigment transformation proportion, aroma compounds, total mesophilic aerobic, lactic acid, Staphlococcus-Micrococcus spp. and coliform bacteria and a sensory properties of sucuk samples were studied. Depending on the duration of fermentation, moisture, protein fat ash and salt contents for the non-heat processed sucuks were found to be 57,97-43,62%, 12,66-15,75%, 25,54-31,65, 3,34- 4,15, 2,41-2,99 respectively. The values for pH, FFA, TBA, L*, a*, and b* were 5,88-4,85, 3,44-5,49 mg KOH/g, 0,264-0,379 mg ma/kg, 48,45-43,66, 16,81-18,35 and 18,33-17,23. Amounts of residual nitrite, nitrosomyoglobin, total pigment and nitrosopigment transformation ratio were 27,83-7,69 ppm, 75,49-177,33 ppm, 208,64-214,42 ppm and 36,17-82,72%. The numbers of mesophilic aerobic bacteria and lactic acid bacteria, Staphlococcus-Micrococcus spp.for the fermented and non-heat treated sucuk were 7,52-8,90 log cfu/g, 6,89-8,90 log cfu/g and 6,82-4,37 log cfu/g respectively. The same parameters for the fermented and heat treated sucuk samples were between 55,36-43,09%, 13,36-15,89%, 26,58-31,89%, 3,48-4,19%, 2,53- 3,05%, 5,96-5,05, 2,92-5,07 mg KOH/g, 0,575-0,662 mg ma/kg, 50,23-47,01, 15,88-17,88, 20,06-18,32, 9,85-1,84 ppm, 136,36-152,50 ppm, 188,97-185,58 ppm, %72.88-81,95, 4,52-3,60 log cfu/g, 2,86-2,00 log cfu/g, 5,51-<1 log cfu/g and <1 log cfu/g. The values for those parameters were also obtained for the traditional Turkish sucuk as 35,29%, 17,38%, 35,21%, 4,57%, 3,33%, 5,05, 6,74 mg KOH/g, 0,427 mg ma/kg, 45,97, 15,44, 12,10, 6,04 ppm, 183,32ppm, 215,33 ppm, %85,16, 7,36 log cfu/g, 8,63 log cfu/g, 4,53 log cfu/g and <1 log cfu/g. It was observed that the effects of fermentation and heat processing on the all of the parameters were significant (P<0,01). While the amounts of some volatile aroma compounds of sucuks were changed, and some new compounds have been formed. On the other hand, some volatile aroma compounds originated from spices were lost upon heat processing. The aroma compounds of sucuk were changed with heat processing, where the taste, smell and flavor of traditional Turkish sucuk were not formed. Extension of fermentation period resulted in a significant (P<0,01) improvement in the sensory properties of heat processed sucuks.
