Türkiye'de üretilen bazı çiçek ve salgı ballarının fenplik asit ve flavonoid profilinin belirlenmesi

Bu çalısmada, Türkiye’de üretilen bazı çiçek ve salgı ballarının karakteristik özelliklerininbelirlenmesi amaçlanmıstır. ki ana bal çesidi olan, salgı ve çiçek ballarından toplam 44 balnumunesi kullanılmıstır. Salgı balları, çam ve mese ballarıdır. Çiçek balları ise, pamuk(Gossypium barbadense), kestane (Castanea sp.), ayçiçek (Helianthus annuus), yayla,karısık çiçek ve narenciye ballarıdır. Bu ballarda bazı fiziksel ve kimyasal analizlergerçeklestirilmis ve daha sonra HPLC kullanılarak farklı ballarının fenolik asit ve flavonoidprofilleri belirlenmistir. Fiziksel ve kimyasal özellikleri açısından; çam balları, yüksek pHdegeri (4,36), düsük früktoz ve glukoz (30,61 ve 23,51 g/100g), düsük glukoz/nem oranı(1,49) göstermistir. Mese balı, en yüksek pH (5,05), düsük früktoz ve glukoz (30,37 ve19,65 g/100g) ve çok koyu renk degerini (L = 23,84) içermistir. Kestane balı, çok yüksekpH (4,81), en yüksek protein (1292,75 μg/g), düsük glukoz (21,89 g/100g), en yüksekfrüktoz/glukoz (1,69) ve en düsük glukoz/nem oranı (1,32) degerlerini içermistir. Pamukbalı, oldukça yüksek pH (3,92), en yüksek glukoz (34,73 g/100g), en düsük früktoz/glukoz(1,12), en yüksek glukoz/nem (2,03) ve çok açık renk degerini (L = 29,42) içermistir.Ayçiçek balı, en düsük pH (3,38), en yüksek früktoz (40,01 g/100g) ve çok yüksek glukoz(33,40 g/100g) içeriklerine sahiptir. Bu çalısmada ayrıca, HPLC kullanılarak 15 fenolikbilesik saptanmıstır. Fenolik asitlerden kafeik ve p-kumarik asit; flavonoidlerden isepinokembrin ve krisin bu arastırmada kullanılan bütün ballarda saptanmıstır. Bütün salgıbalları, yüksek konsantrasyonlarda protokatesik asit içerirken çiçek ballarının tamamınayakınında protokatesik aside rastlanılmamıstır. Mese balı, çam ballarında hiç saptanmayan,yüksek konsantrasyonlarda ellajik asit içermektedir (336,75 μg/100g). Diger taraftan, buçalısmada kullanılan salgı ballarında hiç saptanmayan bir flavonoid olan kamferol; pamuk,yayla ve karısık çiçek balları gibi birçok çiçek balında bulunmustur. Pamuk balnumunelerinin 5’te 4’ünde kuersetin saptanmıstır. Metil sirinjik asit, çok yüksekkonsantrasyonlarda birçok karısık çiçek balında ve önemli konsantrasyonlarda yaylaballarında belirlenmistir. Ayçiçek balları degisken bir fenolik profili göstermektedir.Ayçiçek ballarının 3’te 2’sinde bir flavonoid olan kuersetin bulunmustur. Ayçiçek balınınyalnız bir numunesinde (AÇB09), önemli düzeyde (85,23 μg/100g) mirisetin saptanmıstır.AbstractThe objective of this study was to characterize some floral and honeydew honeys producedin Turkey. Total of 44 honey samples of the main two types of honeys, honeydew and floralhoneys were used. The honeydew honeys were pine (Pinus sp.) and oak (quercus) honeys,while the floral honeys were cotton (Gossypium barbadense), chestnut (Castanea sp.),sunflower (Helianthus annuus), yayla, multifloral and citrus honeys. To achieve this, somephysicochemical analysis were carried out. Next, using HPLC the phenolic acid andflavonoid profiles of the different types of honeys were determined. In the terms ofphysicochemical analysis, pine honeydew honeys were characterized by higher values ofpH (4.36), lower concentrations of fructose and glucose (30.61 and 23.51 g/100g) and lowvalues of glucose/moisture ratio (1.49). The oak honeydew honey was showed highest pH(5.05), lower fructose and glucose (30.37 and 19.65 g/100g) and darkest (L=23.84). Thechestnut honey was characterized by higher pH value (4.81), highest protein (1292.75μg/g), lower glucose (21.89 g/100g), highest fructose/glucose (1.69) and lowestglucose/moisture ratio (1.32). The cotton honey was showed relatively high pH (3.92),highest glucose (34.73 g/100g), lowest fructose/glucose (1.12), highest glucose/moisture(2.03) and lightest (L=29.42). The sunflower honeys were lowest in pH (3.38), highest infructose (40.01 g/100g) and higher in glucose (33.40 g/100g). In addition, using HPLC, 15phenolic compounds were identified. The phenolic acids such as caffeic and p-coumaric,and the flavonoids such as pinocembrin and chrysin were detected in all the samples of thisstudy. All the honeydew honeys contained protocatechuic acid in significant concentrations.In contrast, almost all the floral honey samples were devoid of protocatechuic acid. The oakhoney contained significant concentration of ellagic acid (336.75 μg/100g), which neverdetected in pine honeydew honeys of this study. In the other hand, the flavonoidkaempferol, which was never detected in the honeydew honeys used in this study, wasdetected in many floral honeys, such as cotton, yayla and multifloral. 4 samples out of 5cotton honey were contained the flavonoid quercetin. The methyl syringic acid was detectedin highest amounts in most of the multifloral honeys, and in significant concentrations inyayla honeys. The sunflower honeys were inconsistent in phenolic compounds profile. 2samples out of 3 sunflower honeys were contained quercetin, while one sample (AÇB09)honey was contained myricetin in significant amount (85.23 μg/100g).
