Meyve sularında raf ömrü süresince antioksidan aktivite ve kalite değişimi
Özet
Bu araştırmanın amacı, başlıca meyve sularında raf ömrü süresince antioksidan aktivite ve diğer kalite kriterlerindeki değişimin incelenmesidir. Araştırma materyali; tüketim düzeyine bağlı olarak 1/1 karton kutuda aseptik dolum tekniği ile üretilen portakal suyu, elma suyu, üzüm suyu, nar suyu, şeftali nektarı, vişne nektarı ve kayısı nektarından oluşmaktadır. Meyve suyu örnekleri 4°C ve 20°C’de olmak üzere 2 farklı sıcaklıkta depolanmış ve örnekler kalite parametreleri açısından 2 aylık aralıklarla analiz edilmiştir. Kalite değişim parametresi olarak toplam fenolik madde, antioksidan aktivite, toplam karotenoid, toplam monomerik antosiyanin, C vitamini (askorbik asit), HMF, renk ve duyusal özellikler (tat, koku, görünüş) seçilmiştir. Örneklerde ayrıca briks derecesi, pH değeri ve titrasyon asitliği belirlenmiştir.Bulgulara göre meyve suyu (portakal, elma, nar, siyah üzüm ) ve meyve nektarı (kayısı, şeftali, vişne) örneklerinde briks, pH değeri ve titrasyon asitliği 4 ve 20°C’de bir yıl depolama boyunca değişmemiştir.Kalite parametrelerinden HMF miktarı 4°C’de depolanan örneklerde önemli düzeyde bir artış göstermezken, 20°C’de depolanan örneklerde zamana bağlı olarak artmıştır. En fazla artışın görüldüğü nar suyundaki HMF miktarı daha depolamanın 8.ayından sonra AIJN’de belirtilen kritik limiti(20 mg/L) aşarken diğer örneklerin HMF miktarı 12 ayda kritik limite ulaşmamıştır.20°C’deki 12 aylık depolamada TEAC yöntemi ile belirlenen antioksidan aktivite nar suyu hariç diğer meyve suyu örneklerinde azalmıştır. Başlangıç değerine göre azalma oranı meyve suyuna göre %7.6 ile %35.8 arasında değişmiştir. Antioksidan aktivite azalması vişne ve siyah üzüm suyunda monomerik antosiyanin, toplam fenolik madde ve C vitamini (askorbik asit) ile ilişkili iken portakal ve elma suyu ile şeftali nektarında fenolik madde ve C vitamini (askorbik asit) ile ilişkili bulunmuştur. Portakal suyu ve kayısı nektarında ayrıca toplam karotenoid miktarı da bu açıdan önemlidir.20°C’deki 12 aylık deplamada duyusal özelliklerini en iyi koruyan örneklerin vişne, kayısı ve şeftali nektarı olduğu görülmüştür. Buna karşlık özellikle tat puanının portakal, elma ve nar suyunda oldukça hızlı değiştiği ve raf ömrü açısından en kritik parametre olduğu saptanmıştır. Tat puanına göre 20°C’deki raf ömrü nar suyu için 7 ay, portakal ve elma suyu için ise 9 ay olarak hesaplanmıştır.Bulgular, meyve sularında raf ömrünün belirlenmesinde antioksidan aktivitenin dikkate alınabileceğini ancak bu açıdan kritik bir parametre olamayacağını göstermektedir.Abstract The aim of this study was to monitor the antioxidant activity and other quality criteria changes of fruit juices during the shelf life. The research materials, depending on the level of consumption, consist of orange juice, apple juice, red grape juice, pomegranate juice, peach nectar, sour cherry and apricot nectar which were produced in 1 / 1 carton box by aseptic filling technique. The fruit juice samples were stored in two different temperatures as 4°C and 20°C, and the samples were analyzed in two months periods in terms of quality parameters. Total phenolics, antioxidant activity, total carotenoids, total monomeric antociyanins, Vitamin C (ascorbic acid), HMF content, colour and sensorial properties (taste, odour and appearance) were chosen as the quality parameters. Soluble solid content, pH and titrimetric acidity of the samples were also determined.According to the results, soluble solid content, pH and titrimetric acidity of fruit juices (orange, apple, pomegranate, red grape) and fruit nectars (apricot, peach, sour cherry) did not show a significant change during one year storage at 4°C and 20°C.While HMF contents of the samples stored at 4°C did not change significantly, it increased depending on storage duration at 20°C. Although the HMF content of pomegranete juice which was the sample faced with the maximum HMF increase exceeded the AIJN critical limit value (20 mg/L) after 8 months of storage, HMF contents of the other juices did not reach to critical limit value in the 12 month storage.The antioxidant activity determined by TEAC assay decreased in all fruit juice samples except pomegranate juice in 12-month storage at 20°C. According to the initial value, the decline rate of antioxidant axtivity ranged from 35.8 % to 7.6 % based on fruit juices and nectars. It was found that while the decrease in the antioxidant activity was correlated with the contents of monomeric antociyanin, total phenolics and vitamin C (ascorbic acid) in sour cherry nectar and red grape juice, it was correlated with the total phenolics and Vitamin C (ascorbic acid) in orange juice, apple juice and peach nectar. Total carotenoid content of orange juice and apricot nectar was also important in this respect.It was determined that sour cherry, apricot and peach nectars showed best conservation of their sensorial properties in 12 months storage at 20°C. On the other hand taste score of orange, apple and pomegranate juices changed very rapidly. This parameter was determined as the most critical one for the shelf life. According to taste score, the shelf life of pomegranate juice was calculated as 7 months and of orange and apple juice were calculated as 9 months at 20°C storage.The results showed that antioxidant activity is a considerable parameter for determining the shelf life of fruit juices, however it can not be evaluated as the most critical one in this respect.
