Farklı hasat dönemlerinde ve günün belli saatlerinde toplanan zeytin çeşitlerinden elde edilen yağların uçucu aroma bileşenleri değişiminin araştırılması
Özet
Bu çalışmada ayvalık, memecik ve gemlik zeytin çeşitleri, 2008 ve 2009 yıllarında, 3 farklı olgunluk düzeyinde (yeşil, renk dönümü ve siyah dönem) ve günün 3 ayrı zamanında (sabah, öğlen, akşam) aynı lokasyondan elle toplanmıştır. Zeytinlerin tümü aynı koşullarda laboratuvar tipi santrifüj sistemle yağa işlenmiştir. Elde edilen bu yağlar üzerinde çalışmalar yapılmıştır.Çalışmada yapılan analizler, zeytinyağlarının önemli uçucu aroma bileşenlerinin dağılımı ve bazı klasik zeytin ve zeytinyağı analizleri (olgunlaşma indeksi, kuru madde, yağ oranı, serbest yağ asitliği, peroksit değeri, UV bölgede özgül soğurma) olmak üzere iki grupta toplanmıştır.Tepe boşluğu-katı faz mikro ekstraksiyon (HS-SPME) yöntemi ile zeytinyağı örneklerinin uçucu aroma bileşenlerine ilişkin kalitatif ve kantitatif analizler gerçekleştirilmiştir. 42 çeşit uçucu aroma bileşeni gaz kromatografi-kütle spektrometri / alev iyonlaştırmalı detektör (GC-MS/FID) ile kombine edilmiş cihazla tespit edilmiştir.Farklı olgunlaşma dönemleri zeytinyağının uçucu bileşenleri üzerine önemli etki göstermiştir. Döneme bağlı olarak bazı bileşenlerde artışlar, bazı bileşenlerde azalmalar olmuştur. Özellikle ana bileşenlerden hekzanal olgunlaşmanın ilerlemesi ile düşüş gösterirken, trans-2-hekzenal artış göstermiştir. Zeytinyağı örneklerinde oransal olarak en fazla, hekzanal (% 9.56 (gemlik çeşidi, 2. yıl, 12. ay, sabah örneği) - % 73.21 (ayvalık çeşidi, 1. yıl, 11. ay, öğlen örneği)), trans-2-hekzenal (% 4.85 (ayvalık çeşidi, 1. yıl, 11. ay akşam örneği) – % 64.29 (memecik çeşidi, 1. yıl, 12. ay, akşam örneği)) ve 1-penten-3-one (% 1.98 (memecik çeşidi, 2. yıl, 12 ay, öğlen örneği) – % 13.27 (gemlik çeşidi 1. yıl, 11. ay, akşam örneği)) bileşenleri tespit edilmiştir. Gün içindeki hasat zamanlarına göre sadece lipoksigenaz enzim yolu ile oluşan 6 karbonlu, cis-3-hekzenil asetat ile lipoksigenaz enzim yolu dışında oluşan 2-metil butanal, 2-metil-1-butanol ve nonanal bileşenlerindeki değişimler önemli bulunmuştur. Ancak bu bileşenlerin tüm örneklerde günün belli zaman dilimlerine göre aynı yönde artış ve düşüş göstermediği saptanmıştır. AbstractThe olive fruits of Ayvalik, Gemlik and Memecik were harvested by hand belong to 2008 and 2009 harvest year at, 3 different level of maturity (green, color change and black period) and 3 different time of day (morning, afternoon, evening) from the same locations. Olive fruits are processed using laboratory-type centrifugal oil system.Olive fruit and olive oil samples were analyzed for their volatile aroma compounds and some other analysis such as (maturation index, dry matter, fat content, free fatty acid, peroxide value, and specific absorption of UV in the region).Qualitative and quantitative analyses of volatile aroma compounds of olive oil samples were carried out as by headspace-solid phase micro extraction (HS-SPME) method. Fourth two compounds were identified using gas chromatography-mass spectrometry with flame ionization detector (GC-MS/FID)Maturity levels showed significant effect on the volatile compounds of olive oil. Some compounds increased, with the others decreased depending on the harvest period. Especially, hexanal which is the main components dropped with the progress of ripening the harvest period, while trans-2-hexenal increased. The ratio of maximum specified components are hexanal (% 9.56 (Gemlik sample, in 2009, 12th month, morning) - % 73.21 (Ayvalık sample, in 2008, 11th month, noon)), trans-2-hekzenal (% 4.85 (Ayvalık sample, in 2008, 11th month, evening) – % 64.29 (Memecik sample, in 2008, 12th month, evening)) and 1-penten-3-one (% 1.98 (Memecik sample, in 2009, 12th month, noon) – % 13.27 (Gemlik sample, in 2008, 11th month, evening)). According to harvest times in a day just by lipoxygenase trace consists of 6-carbon, cis-3-hexyl acetate with hexenil lipoxygenase trace out the path of the 2-methyl butanal, 2-methyl-1-butanol and nonanal were significant changes in components. However, it was determined that this components of all samples did not shoe increase and decrease in same way at the certain time periods of the day.
