Ekolojinin kabuklu ve kabuksuz çekirdek kabak (Cucurbita pepo L.) hatlarında tohum verimi ve çerezlik kalitesine etkisi

Bu araştırma, 2007 ve 2010 yılları arasında ıslah çalışması sonucu seçilen 5 kabuklu ve 2 kabuksuz çekirdek kabağı hattında ekolojinin kabak çekirdeği verimi ve elde edilen çekirdeklerin çerezlik değeri ile kimyasal bileşimi üzerine etkisini incelemek amacıyla yapılmıştır. Ülkemizde çekirdek kabağı yetiştiriciliğinin yaygın olarak yapıldığı Trakya Bölgesi’ni temsilen Kırklareli, İç Anadolu Bölgesi’ni temsilen de Nevşehir ve Ankara lokasyonları seçilmiştir.Araştırmada bitki başına meyve sayısı, meyve ağırlığı, meyve boyu-çapı, boy/çap oranı, meyve şekli, meyve rengi ve bitki başına tohum verimi, şekil ve renk belirlenmiştir. Kabak çekirdeklerinin taze ve kavrulmuş tohumlarında fiziksel özellik olarak irilik, tohum iç oranı; kimyasal özellik olarak da nem, toplam yağ oranı ve yağ asitleri kompozisyonu, protein, vitamin E ve mineral madde içerikleri (Fe, Mn, Mg, K, P) saptanmıştır. Çekirdek kalitesi ile ilişkili olarak çekirdeklerin çıtlama kolaylığı değerlendirilmiştir.Araştırma sonucunda meyve ve tohum özellikleri üzerinde tek başına hatlar veya lokasyonlar etkili olmamış, interaksiyon önemli çıkmıştır. Aynı şekilde taze ve kavrulmuş tohumlarda nem, toplam yağ oranı, yağ asitleri kompozisyonu, protein, vitamin E ve mineral madde miktarı hat ve lokasyonlara göre değişiklik göstermiştir.Kabak çekirdeği tohumlarında toplam yağ oranının yüksek (%35-48), doymamış yağ asitlerinden oleik ( %40-%58) ve linoleik asidin (%30-%40) baskın yağ asitleri olduğu, %35-40 protein içerdiği, ayrıca magnezyum, potasyum ve fosfor yönünden diğer elementlere göre zengin olduğu sonucuna varılmıştır. Hatlara ait kavurma işleminin kabak çekirdeği bileşiminde yer alan ve ısıya hassas olan bileşim unsurlarını etkilediği, fakat kavurma ile kabak çekirdeği etrafını saran zar tabakasının uzaklaştırıldığı, çıtlamayı kolaylaştırdığı ve kabak çekirdeğine has renk, aroma, tekstür gibi özellikler kazandırdığı, ham tadın kaybolduğu ve nemi düşürerek uygun depolama koşullarına daha dayanıklı hale getirdiği belirlenmiştir.Abstract This study has been carried out to examine the effect of ecology on pumpkin seed yield, snack value of pumpkin seeds and chemical composition among 7 pumpkin lines (5 and 2 naked) selected as a result of breeding studies in 2007 and 2010. Kırklareli has been chosen to represent Thrace Region and Nevsehir and Ankara have been chosen to represent Central Anatolian Region where pumpkin production in Turkey is intensified.In our research we were detailed the following characteristics: number of fruits per plant, weight of fruit, fruit length-diameter, length/diameter ratio, fruit shape, fruit colour, seed yield per plant, shape and colour. For both fresh and roasted pumpkin seeds, we have taken into consideration the size, seed inner side ratio as physical characteristics and humidity, total oil ratio and composition of oil acids, protein, Vitamin E and mineral substance content (Fe, Mn, Mg, K, P) as chemical characteristics. The easiness of seed cracking has been evaluated with regard to seed quality.At the end of the research, it has been found out that the lines and different locations do not influence characteristics of fruit and seed on their own and that interaction is important. On the other hand humidity, total oil ratio and composition of oil acids, protein, Vitamin E and mineral substance content for both fresh and roasted seeds have shown certain difference according to the lines and locations.It has been concluded for the pumpkin seeds that total oil ratio was high (35%-48%), that oleic acid (40%-58%) and linoleic acid (30%-40%) are dominant oil acids, that it contains 35%-40 % of protein and that it was rich in magnesium, potassium and phosphorus, compared to other elements. It is observed that, the roasting process in the lines affected the composition of components sensitive to the temperature which exist in the pumpkin seeds; however, through roasting, the membrane layer surrounding the seed was removed, it facilitated cracking and brought some characteristics such as colour, aroma and texture unique to the pumpkin seed, raw taste disappeared and it made more resistant to the proper storage conditions through reduction of the humidity.
