Keçi sütünden yardımcı starter kültür kullanılarak üretilen beyaz peynirde ace-inhibitör aktivitesi ve antioksidan kapasitenin araştırılması

Çalışmada, keçi sütünden üretilen Beyaz peynirde yardımcı starter kültür kullanımının peynirin ACEinhibitörve antioksidan aktivitesi üzerine etkileri araştırılmıştır. Deneme peynirlerinin üretiminde starter kültür olarak Lactococcus lactis subps. lactis ve Lactococcus lactis subsp. cremoris ticari starter kültürlerine ilaveten, yardımcı kültür olarak Lactobacillus casei, Lactobacillus plantarum ve Lactobacillus bulgaricus kullanılmıştır. Bu kapsamda biri kontrol olmak üzere toplam 4 farklı Beyazpeynir üretilmiştir. Üretilen peynir örneklerinde çalışma kapsamında bazı kimyasal özellikleri(kurumadde, yağ, asitlik, tuz, protein, WSN), ACE-inhibitör ve antioksidan aktiviteleri belirlenmek üzeredepolamanın 1, 30, 60 ve 90. günlerinde analiz edilmiştir. Araştırma sonucuna göre peynir üretiminde kullanılan yardımcı starter kültür mikroorganizmalarının olgunlaşmanın 60. gününe kadar suda çözünür azot içeriklerindeki artışa paralel olarak ACE-inhibitör veantioksidan aktivite değerlerinde artışa neden olduğu saptanmıştr. Araştırmada en yüksek antioksidanaktivite olgunlaşmanın 60. gününde Lactobacillus bulgaricus yardımcı starter kültürü kullanılarak üretilen D örneğinde (% 62,55) tespit edilmiştir. En yüksek ACE-inhibitör aktivite değerleri ise Lactobacillus casei (% 51,95) ve Lactobacillus bulgaricus (% 51.15) kültürleri kullanılarak üretilen peynir örneklerde olgunlaşmanın 60. gününde tespit edilmiştir. Olgunlaşmanın 60. gününden sonra tüm deneme örneklerinde ACE-inhibitör ve antioksidan aktivitede azalma saptanmıştır. Aktivite değerlerindeki bu düşüş, artan proteoliz sonucunda aktif peptitlerin parçalanarak inaktif forma dönüşmesiyle ilişkilendirilmiştir.AbstractIn the study, the effects of adjunct starter culture on white cheese produced from goat milk were investigated on the ACE-inhibitory and antioxidant activity of cheese. Lactococcus lactis subps. lactisand Lactococcus lactis subsp. cremoris commercial starter cultures were used as a starter culture in theproduction of test cheeses. In addition, Lactobacillus casei, Lb. plantarum and Lb. bulgaricus were usedas adjunct cultures. Within this scope, a total of 4 different white cheeses were produced, one of thembeing a control. Some chemical properties (dry matter, fat, acidity, salt, protein, wsn), ACE-inhibitor andantioxidant activities were analyzed on the 1st, 30th, 60th and 90th days of storage in the produced cheesesamples.According to the results of the study, it was determined that the adjunct starter culture microorganismsused in cheese production caused an increase in ACE-inhibitor and antioxidant activity values parallel tothe increase in water soluble nitrogen contents until the 60th day of ripening. The highest antioxidantactivity in the study was detected in the D (62.55% ) sample using Lactobacillus bulgaricus co-starterculture on the 60th day of ripening. The highest ACE-inhibitory activity values were determined on the60th day of ripening of the cheese samples produced using Lactobacillus casei (51.95% ) andLactobacillus bulgaricus (51.15% ) cultures. After 60 days of maturation, ACE-inhibitor and antioxidantactivity decreased in all experimental samples. This decrease in activity values has been associated withthe breakdown of active peptides into an inactive peptide form as a result of increased proteolysis.
