Geleneksel Türk gıdalarının adsorpsiyon izotermlerinin belirlenmesi
Özet
Bu çalışmada, kurutulmuş sebzelerin (domates, biber ve patlıcan), leblebi (sarı), vemantının standart gravimetrik yöntem kullanılarak adsorpsiyon izotermleri 25°C'de ve %11ile %90 bağıl nem aralığında belirlenmiştir. Elde edilen sorpsiyon deney sonuçlarının,kurutulmuş sebzeler için yaygın olarak kullanılan 4 eşitliğe (Linearize edilmiş B.E.T. iledoğrusal olmayan G.A.B., Oswin ve Halsey eşitlikleri) uygunluğu da araştırılmıştır.B.E.T. sınıflandırmasına göre, kurutulmuş domates ve leblebiye ilişkin adsorpsiyonizotermlerinin tipik sigmoid şekilli (S şekilli) Tip II izoterm tipine uygun olduğusaptanmıştır. Buna karşın, kurutulmuş biber ve kurutulmuş patlıcana ilişkin izotermlerinise, J şekilli Tip III izoterm tipine uygun olduğu belirlenmiştir. Mantıya ilişkin elde edilenadsorpsiyon izoterminin ise, herhangi bir izoterm tipine uymadığı belirlenmiştir.Kurutulmuş domates, kurutulmuş biber, kurutulmuş patlıcan ve leblebiye ilişkinadsorpsiyon izotermlerine en iyi uyan modelin G.A.B. modeli olduğu belirlenmiştir.Uygulanan modeller içinde; kurutulmuş domatesin adsorpsiyon izotermlerinin G.A.B.,Oswin and Halsey modelleri ile yeterli bir şekilde tanımlanabildiği, ancak en iyi modelinG.A.B. modeli olduğu saptanmıştır. Kurutulmuş biberin adsorpsiyon izotermleri dedoğrusal olmayan üç model ile tanımlanmış, ancak en uygun modelin Oswin modeli olduğubelirlenmiştir. Leblebi için elde edilen adsorpsiyon verileri, en iyi G.A.B. ve Oswinmodelleri ile tanımlanmıştır. Kurutulmuş patlıcanın adsorpsiyon verileri ise, en iyi G.A.B.modeli ile tanımlanmıştır.En yüksek monomoleküler su içeriği (M0), kurutulmuş domateste bulunurken, en düşükdeğer ise, leblebi ve kurutulmuş patlıcanda bulunmuştur. B.E.T. ve G.A.B. eşitliklerindenbulunan Mo değerleri sırasıyla; kurutulmuş domates için ?9.833 g H2O/100 g KM? ve?11.839 g H2O/100 g KM,? kurutulmuş biber için ?7.696 g H2O/100 g KM? ve ?7.850 gH2O/100 g KM,? leblebi için ?6.125 g H2O/100 g KM? ve ?6.848 g H2O/100 g KM? vekurutulmuş patlıcan için ?6.487 g H2O/100 g KM? ve ?6.886 g H2O/100 g KM? düzeyindesaptanmıştır.AbstractThis study was conducted to determine the moisture adsorpsion isotherms of sun-driedvegetables (tomatoes, peppers and eggplants), roasted chickpea (leblebi) and ?mantı? at 25°Cusing the standard gravimetric method over a range of 11% to 90% relative humidity. Theexperimental sorption data were fitted with 4 models commonly used for dried vegetables:linearized B.E.T and non-linear G.A.B., Oswin and Halsey.According to B.E.T. classification, the adsorption isotherms of dried tomatoes and roastedchickpea showed the typical sigmoid shape (S shape) of Type II behaviour, while driedpepper and dried eggplant showed J shape of Type III behaviour. The adsorpsion isotherm of?mantı? did not fit B.E.T. classification.The G.A.B. model generally gave the closest fit to the adsorption isoterms of dried tomatoes,dried pepper, dried eggplant and roasted chickpea. Of the models tested, the G.A.B., Oswinand Halsey models satisfactorly described the adsorpsion isoterms of dried tomatoes, whilethe G.A.B. model was the best fit. The adsorpsion isoterm of dried pepper was also fitted byall three non-linear models, but the best fit was Oswin model. The G.A.B. and Oswin modelsgave the best fit to the adsorpsion data for roasted chickpea. The best applicable model forthe adsorption data for dried eggplant was G.A.B. model.The highest monolayer water content (Mo) was found for dried tomatos, while the lowest wasfor roasted chickpea and dried eggplants. The respective Mo values from B.E.T. ve G.A.B.equaitons were ?9.833 g H2O/100 g d.w.? and ?11.839 g H2O/100 d.w.? for dried tomatoes,?7.696 g H2O/100 g d.w.? and ?7.850 g H2O/100 g d.w.? for dried peppers, ?6.125 g H2O/100g d.w.? and ?6.848 g H2O/100 g d.w.? for roasted chickpea and ?6.487 g H2O/100 g d.w.? and?6.886 g H2O/100 g d.w.? for dried eggplants.
