Rezene (Foeniculum dulce Miller) uçucu yağının verimine ve bileşimine partikül boyutunun etkisi

Bu çalışmada, tatlı rezene (Foeniculum dulce Miller) tohumları öğütülerek elde edilen 5 farklı boyuttaki partiküllerin, uçucu yağın verimine ve bileşimine etkisi araştırılmıştır. Materyal olarak, Burdur’un Gölhisar ilçesinde 2010 ve 2011 yıllarında yetiştirilip hasat edilen rezene tohumları kullanılmıştır. Tohumlar öğütüldükten sonra elek analizi yapılarak beş farklı partikül boyutunda (<300μm, 300-710μm, 710μm-1mm, 1-1,4mm, >1,4mm) sınıflandırılmıştır. Öğütülmüş rezeneden su destilasyonu yöntemi ile her fraksiyonun uçucu yağı elde edilmiş ve analizler bu yağlar üzerinde yapılmıştır. Rezenede uçucu yağ oranları partikül boyutu arttıkça sırasıyla % 5,94; 5,15; 2,84; 1,74; 1,24 bulunmuştur. Fraksiyonlara göre, en çok uçucu yağ 2010 yılı hasatı rezene tohumunda <300μm fraksiyonda (% 6,06), en az yağ ise 2011 yılı hasatı rezene tohumunda 1,4mm< fraksiyonda (% 1,18) belirlenmiştir. Ayrıca, tüm fraksiyonlarda 16 adet uçucu aroma bileşeni bulunmuştur. Partikül büyüklüğü <300μm ve 300-710μm olan fraksiyonlarda 15 adet uçucu yağ bileşeni belirlenmiş olup, diğer daha büyük partikül boyutlarında tanımlanan uçucu yağ bileşenleri 16 adettir. Analiz sonuçları için yapılan istatistik değerlendirmede, hasat yılları uçucu yağ verim ve bileşiminde farklılığa neden olmazken, partikül boyutunun uçucu yağ verimi ve bileşimi üzerinde etkili olduğu görülmüştür. Bileşim üzerindeki partikül boyutunun etkisi en çok, rezene uçucu yağının en önemli bileşeni olan trans-anetolde (% 88,14 – 89,57) görülmüştür (p<0,05). Diğer uçucu yağ bileşen oranlarının istatistiksel olarak partikül büyüklüğünden etkilenmediği görülmekle beraber, trans-anetolü sırasıyla; estragol (% 3,93 – 4,69), limonen (% 2,87 – 4,36) ve fenkon (% 0,97 – 1,46) takip etmiştir.AbstractThe aim of this study, although it varies according to material, obtained by applying called size reduction process (crushing, cutting, chopping, mincing, grinding) also to the fennel seed processing certain size in the particles, to investigate the effect of the essential oil yield and composition. Fennel seeds, harvested from Gölhisar/Burdur/Turkey, is most important fennel culture area, in 2010 and 2011 were used as material. After grinding and sieving analysis in the same conditions in five different particle sizes (<300μm, 300-710μm, 710μm-1mm, 1-1,4mm, > 1.4m) and the water distillation of classified materials, methods derived essential oils and analysis was performed on these oils . The yield of essential oil of fennel seeds milled result of applying water distillation method in the study of different particle size and distribution of essential oil compounds was investigated. The particle size fennel essential oil rates increased respectively 5.94; 5.15; 2.84; 1.74; 1.24 %. According to the fractions , the most essential oil of fennel seed harvest of 2010 were identified in fraction of < 300μm ( 6.06 %) , the least fat fennel seed harvest of 2011were identified in fraction of 1.4mm < ( 1.18 %). Furthermore , 16 volatile aroma components were found in all fractions . 15 essential oil components were determined in fraction of particle size < 300μm and 300-710μm , the essential oil components have been identified in other larger particle sizes is 16 pieces. Statistical evaluation of analysis results, whereas the harvest year causes no difference in the yield and composition of the essential oil , particle size has been shown to have an effect on essential oil yield and composition. Generally the effect of particle size on the composition, fennel was observed in trans-anethole (88.14% – 89.57%), the major component of the essential oil components (p<0,05). Proportion of other volatile oil components has been shown to not be affected by particle size and after trans- anethole they were determined respectively estragole (% from 3.93 to 4.69 ) , limonene (% from 2.87 to 4.36 ) and fenchone ( % from 0.97 to 1.46).
